Peach Cobbler. This peach cobbler could not be easier to make or quicker to put together. Delicious, amazing, and can be made any time of the year.

Growing up, my family was a dessert family. Every single dinner was followed by a dessert of some sort. I remember going to friends’ houses as a child, and if I wasn’t offered dessert, thinking, “Well there must be something not right with these people.” At some point in time I realized that my family might be the ones taking dessert to an extreme, but decided that just meant I had grown up in an exceptionally great family, and went with it.

Fast forward a few years … I got married, had kids, and realized I needed to cut back on my dessert consumption if I wanted my children to value food groups other than sugar. However, when my parents visit, I know they are accustomed to having dessert on the daily. In the spirit of pure, unselfish, hospitality, and wanting them to feel at home, I incorporate desserts into the daily meal plan. Read between the lines: I look for any excuse to eat dessert.

This past week my parents were visiting, so it was a dessert week at my house! Peach cobbler was a staple of my childhood, so I decided to make it for my parents. Plus, fruit isn’t really a dessert, it’s more like a healthy part of a balanced diet, right?!?!

For this peach cobbler, I used my mom’s recipe, but changed it just a bit to be able to use canned peaches (they still aren’t available at my grocery store this year), and added a bit of zest. I highly recommend you make it.

Note: This past Christmas I was given a few Le Creuset dishes, and I now use them for most casseroles and cobblers. Things cook nicely in them, they clean easily, and they’re just pretty. They are worth the hype. This is the one I used for this recipe (Amazon link).

Peach Cobbler

This peach cobbler is super quick, perfect for winter since it's made with canned peaches, and straight up delicious.

Ingredients

  • 1/2 cup unsalted butter
  • 1 1/4 cups sugar divided
  • 1 cup self rising flour
  • 1 cup milk
  • 1 teaspoon almond extract
  • juice of 1/2 lemon
  • 3 15 ounce cans cans peaches in 100% juice, NOT in heavy syrup
  • pinch salt
  • cinnamon

Instructions

  • Preheat oven to 350 degrees.
  • Melt butter and spread into bottom of 9x13 inch dish or 9 inch oval casserole dish.
  • Mix together 1 cup of sugar, flour, milk, and almond extract. Set aside.
  • Drain peaches and then place in large saucepan over medium heat. Mix in remaining 1/4 cup of sugar and lemon juice. Stir until sugar has dissolved, about 3-4 minutes. Remove from heat.
  • Gently pour sugar/flour mixture over butter.
  • Gently spoon peach mixture over sugar/flour mixture. DO NOT mix.
  • Sprinkle with cinnamon.
  • Bake for 40-45 minutes or until edges begin to brown and center is golden.

Notes

If you do not care for almond extract, it would be fine to substitute 1.5 teaspoons vanilla.
