There are many reasons why you would like to use a substitute for regular flour. If you need to eat gluten-free or low-carb. Almond can be that alternative but it is also quite expensive. So why not make it yourself? Especially when it is very easy to do. So, are you ready to learn how to make almond flour? Let’s get started!

What You Need For This Recipe

When you make low-carb flour you need a couple of ingredients. Make sure you have the following ingredients when you start:

  • Almonds – use whole almonds with the skin on
  • Water – for boiling
  • Baking soda – to help remove the almond skin

How To Make Almond Flour

  1. Almonds have brown skin that has a specific taste. You can decide to grind your almonds with the skins but your flour will taste much better if you skin the almonds.
  2. Take a pan with water and bring to a boil. Then add 1½ tablespoons of baking soda to the water. Make sure the water is boiling again and then add the almonds to the boiling water.
  3. Boil for 3 minutes. Now test to see if the skin comes off. To do this take one almond and drop it into cold water. If the skin does not come off easily extend the cooking time by half a minute and test an almond again.
  4. If the skin comes off easily then turn off the heat. Scoop all of the almonds out of the pan and drop them in the cold water. Now you can remove all the skin from the almonds.
  5. Put them on a clean kitchen towel and let them completely dry. The drier the better your flour will be so this can take some time. I recommend to skin the almonds and let them dry overnight. You can make flour the next day.
  6. When the almonds are completely dry put them in a food processor and let it run for about a minute. Store the almond flour in a resealable bag or an airtight food container.
  7. You can use the flour for low-carb or gluten-free tortillas or sweet baking recipes

If you are on a low-carb Keto diet or eating gluten-free you may think that tortillas or cooking and baking with flour are not an option.

Fortunately, there is a great way to use flour for your tortillas or bread and bakes. That option is called almond flour. Because this type of flour contains a limited amount of carbohydrates it fits perfectly in a low-carb or keto diet.

It is very versatile and has a neutral taste, which is why it is a perfect substitute in a lot of baking recipes. However, it is quite expensive flour compared to regular flour.

It can be up to ten times more expensive. As whole almonds are much cheaper than buying almond flour you can easily make flour from almonds yourself.

What Is Almond Flour?

It is a gluten-free nut flour, that is not milled flour, like regular wheat flour but a finely ground flour. This flour consists of nothing but blanched no skin almonds.

It is used as the main ingredient for French macarons but is also used for baking airy cakes, cookies, or low-carb tortillas.

The Difference Between Almond Flour And Almond Meal

The differences between this flour and meal are quite subtle. Almond meal is made with whole unblanched almonds. So, the skin is not removed.

The color of the almond meal is a little darker. It is also not grounded as finely as almond flour resulting in a different texture as it is more ground.

How Much Almond Flour Does 1 Cup Of Almonds Make?

In case you are wondering you can get approximately 1¼ cups of almond flour using 1 cup of blanched almonds. A cup of balanced almonds is 120 grams or 4.2 ounces.

How To Store Almond Flour?

Be certain that you grind the flour from dry almonds after you blanch them. You have several options to store your homemade almond flour:

  • Room temperature – As almonds contain oil the flour from it can go rancid. To prevent this, you should store it in an airtight container. Keep it away from oxygen and moisture as much as possible. You can keep it at room temperature but store it in a dry and dark place. Do not put it in sunlight or near a heat source as it doesn’t like heat
  • Refrigerator – if you know you are not going to use the flour for a couple of weeks or the room temperature is rather high you can keep it in the refrigerator. Put it in an airtight container and label it with the date
  • Freezer – you can store your flour in the freezer as well especially if you know you are not going to use it for up to a couple of months. Just put the flour in a freezer-friendly container and put it in the freezer.

How Long Does Almond Flour Last?

As mentioned above almonds contain oil and as a result, can go rancid. So, before you use it in a recipe always smell it. Almond flour should smell nutty.

If it doesn’t and instead has a rancid or sour smell you know it is time to throw it away. Homemade almond flour should be able to last for a minimum of 2 months at room temperature if you store it as described above.

Can it go Bad says, it sees no reason why this flour shouldn’t last a few months more similar to store-bought flour. As long as you take good care of it.

If you are gluten-free you can use the following, flour options that you can make yourself:

  • Dried chickpea flour – you need a very strong food processor
  • Dried cannellini bean flour – same as with the chickpea flour you need a high-power food processor
  • Corn flour – this flour is used in corn tortillas and it is also a gluten-free flour

More Low-Carb Flour Options

Besides almond flour you can use the following flours:

  • Coconut flour – is a great substitute for regular flour. One thing to consider. Coconut flour absorbs a lot of liquid. Do not you the same measurements as regular flour but use about ⅓ to ¼ cup of coconut flour to regular flour
  • Almond meal – if you decide not to skin the almonds and grind them into flour you get an almond meal. This even easier to prepare
  • Flax meal – grind your flax seeds and turn them into flax meal which is also a great substitute for regular flour

Ingredients

  • 175 grams almonds
  • 1½ tablespoons baking soda
  • water

Instructions

  1. Boil water and add the baking soda to the water
  2. Add the almonds to the boiling water and boil the almonds for 3 minutes
  3. Test to see if the skin comes off. If that is not the case extend the cooking time with half a minute and test an almond again
  4. When the skin comes off turn of the heat, scoop all almonds out of the pan and into cold water
  5. Skin all your almonds. Put them on a clean kitchen towel and let them dry
  6. When the almonds are dry put them in a food process and let it run for a couple of minutes into almond flour

Notes

The longer you let the food processor run the finer your almond flour will be. Do not over process else it will turn into a paste.
