This is a Ginger Syrup and grilled watermelon cocktail

Not many fruits scream Summer to me like watermelon. We are in the midst of our grilling series, which is very summer oriented. I thought it would be fun to mash up the tastes of grilling with the tastes watermelon to make a fun grilled Summer cocktail. Today, we are going to make a Ginger and Grilled Watermelon Cocktail. That name is so boring, though, so I thought I would call this one Prince Harry’s Cookout!

If you can’t guess, this is a sweet drink. Watermelon combined with ginger syrup and rum to make a nice deck sipper.

Ginger? What About The Ginger?

I have been on a ginger kick and have been wanting to make some candied ginger for a while. Well, I finally did it and it is super easy. The recipe I use for candied ginger is from Genius Kitchen. As an added bonus, you get this fantastic ginger syrup that is almost like a condensed simple syrup that has been infused with ginger.

Well, now I have a bunch of ginger syrup laying around. I knew right away that it was going to end up in a cocktail. And how fun is the name Prince Harry’s Cookout for a red, grilled, ginger drink?

Summer Flavors and Watermelon Cocktails

If you follow me on Instagram, you know that I have really been on a summer flavor kick when it comes to cocktails. While I always enjoy a finger of whiskey on the rocks, a Manhattan, or an Old Fashioned, I do love using the flavors of fresh stuff around us. Watermelon is just that flavor. I rarely purchase a watermelon in any other season and I really wanted to incorporate that into this series.

Grilled Watermelon for this Cocktail

I am not going to lie. This has been my first experience with grilled watermelon and it has been interesting. Grilling watermelon does change the flavor and texture of the fruit. I am not going to say it is better than a great piece of cold, fresh watermelon, but it definitely is a fun and interesting way to serve the fruit.

What started me down the ginger route was that I decided to try glazing the watermelon cocktail before I grilled it. While the watermelon can form a nice caramelized shell on its own, a light coating of the ginger syrup can really make that grilled watermelon pop and add extra grilling flavors.

Rum for the Alcohol

Since it is a Summer drink, I thought rum would be a great addition to this drink we constructed. We used a basic Bacardi rum for ours, but really any nice rum would work. There is a lot of sweet flavor going on in this cocktail and I can’t say that the alcohol is the star of this drink. It is, however, very, very necessary.

Description

This cocktail is made in the styles of Prince Harry himself. This ginger drink is a bit red, has a wild streak, but at the end of the day is fun as hell. If you are looking for an interesting grilled watermelon cocktail, you found it.

Ingredients

  • 2 slice of Ginger Glazed Grilled Watermelon
  • 1 Ounces of Ginger Syrup (see notes)
  • 2 Ounces Rum
  • 1.5 Cup Ice
  • Soda Water to Top

Instructions

  1. Preheat grill to medium temps
  2. Lightly glaze watermelon with ginger syrup
  3. Place on grill and cook for 2-3 minutes each side until char marks are visible
  4. Remove and remove rind from just one of the slices
  5. In a shaker, add the watermelon whose rind has been removed, ginger syrup and rum
  6. Muddle
  7. Add Ice and stir for 30 seconds
  8. Add to Highball Glass and top off with soda water.
  9. gently stir to incorporate soda water
  10. Garnish with other watermelon

  1. Do you think I could talk Prince Harry into coming to my BBQ if I served these? They sound delicious. I love making candied ginger – it’s a great way to use up any ginger you might have when you bought a chunk for a recipe. And the syrup byproduct is, as you suggest, too good to waste. It makes a good ginger ale, and it’s also good combined with whiskey. I’ve never had grilled watermelon, though, and I’m curious to try it.

    1. Grilled watermelon is def worth a try. Now, I don’t think I will ever be giving up nice, simple, awesome regular raw watermelon, but it has been fun to monkey with it.

  2. Very interesting! Grilling watermelon isn’t something I would have ever thought to do. It seems so delicate I’d assume it would just dissolve under the heat of the grill, but obviously that’s not the case. May give it a go this weekend!

    1. I can’t say I would do it every day, but it is an interesting way to try it. Also, many just grill it, but I think that sugar glaze adds a little bit when it gets cooked like that.
