Oven Roasted Tomato Quinoa with Spinach and Spicy Italian Sausage

 If you’ve followed my blog for a while, you know that quinoa is one of my favorite things to eat and cook.  It is protein-rich, and also contains iron, lysine, magnesium and Riboflavin, and about twice as much fiber as other grains.  This dish was healthy, so colorful and fresh.  It’s the perfect filling and flavorful dish, and so good for you!

Oven Roasted Tomato Quinoa with Sausage

Oven Roasted Tomato Quinoa with spinach and spicy Italian sausage


Ingredients

3/4 cup dried quinoa
1 3/4 cup chicken broth
1/4 cup dry white wine
2 tbl olive oil
2 garlic cloves, minced
1 small onion, diced
12 oz baby spinach
1/4 cup goat cheese, crumbled
1 cup cherry tomatoes, oven roasted
3 spicy Italian sausages, sliced
salt and pepper, to taste

Instructions

Preheat the oven to 350 degrees.

Combine the broth and wine in a large saucepan over medium heat.  Bring to a boil and add quinoa, reduce heat and cover.  Let cook for 15 minutes or until the liquid is absorbed.

While the quinoa is cooking, put grape tomatoes in an oven safe dish and toss with olive oil, salt and pepper.  Roast in the oven for about 20 minutes or until they become slightly charred, then remove and set aside.

Heat olive oil in a large skillet.  Add the sliced sausage and cook until browned.  Then add onion and garlic and cook until the onions are translucent.  Add the spinach and cook until wilted.

Add the spinach mixture to the quinoa, tossing with the roasted tomatoes, goat cheese.  Stir to combine.  Top with additional cheese if desired.
