Cranberry Cornflakes Cookies
These cornflake cookies are a twist to any regular cookie recipe and one of the best cranberry recipes I have. It’s loaded with dried cranberries and crisp cornflakes. Cranberry Cornflakes Cookies are full of crunch in every bite along with bits of white chocolate and cranberries loaded in every cookie. It could be freshly baked or kept for days, but these corn flake cookies will always stay crunchy and delicious.

Cranberry Cornflakes Cookies – Easy Cookie Recipe
Have you ever made cornflake cookies ?? I’ve always loved them since their so crisp and yum. So, cranberry’s in Bombay are expensive since their not easily available. I had a friend who got me a huge pack of cranberry’s from the U.S and that got me so eager to bake something using cranberries.
The white chocolate chips added to the cookies is something you can avoid if you’d like to but I enjoy the combination of white chocolate and cranberry, they go really well together.

LET’S TALK INGREDIENTS FOR THE CRANBERRY COOKIES
CORNFLAKES
Firstly, this is the ingredient that brings the crunch in every bite. To enhance it, bake the cornflakes at 170 degrees C for 10-15 mins before you combine it with other ingredients. Also, I get adventurous sometimes and add flavored cornflakes like strawberry, Honey & Almond, etc.
CRANBERRY
Next, in this recipe, I’m using dried cranberries but fresh ones would do. The dried is available in Bombay, fresh not always. However, you can use whatever is available, or maybe affordable

Cranberry Cornflakes Cookies Recipe
Ingredients
- 150 grams salted butter, room temperature
- 180 grams castor sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 110 grams cornflakes
- 240 grams flour
- 1 teaspoon baking powder
- 100 grams cranberries
- 50 grams white chocolate chips
Method
- Bake the cornflakes on a baking sheet lined with parchment paper for 10-15 mins at 170 degrees C
- In a bowl, combine the flour & baking powder, mix well and set aside
- In another bowl, beat the butter & sugar together until light & fluffy. Add the vanilla essence and eggs one at a time while beating
- Beat the flour mixture into the batter and fold in the cornflakes along with the cranberries & white chocolate chips
- Using an ice cream scooper, scoop out the batter and place them on a baking pan lined with parchment paper. Bake the cookies at 180 degrees C for 15-20 mins or until the cookies turn golden brown

Hey Alisha! Your cranberry cornflakes cookies sound and look so good. The perfect accompaniment to tea. What really got my attention was that they remain crunchy even after some time. It’s a personal preference of course, but I hate soft baked cookies, especially the store bought ones which are so loaded with sugar, they taste like sugar bombs!
