Easy Raspberry Tiramisu

What kind of a food blog it would have been, if tiramisu had been missing. And indeed, tiramisu had been missing on my blog. We made it in our home a few years ago, but we had a recipe which required eggs so we didn´t like it. Now, I wanted to give it a shot again, but this time without eggs and, to make it special, with the addition of home-grown fresh raspberries. Homemade, no-egg and wonderfully easy raspberry tiramisu was created. When I consider how simple it is, it is almost unbelievably tasty. I left ladyfingers to soak a little longer than I should have so I later faced a problem with serving, but since they were very soaked with coffee, tiramisu literally melted on my tongue. It is up to you for how long you keep them in coffee, but make sure they don´t fall apart in your hands, then it is already late 😀 Fresh raspberries are a great combination with coffee and creamy mascarpone whipped cream filling. This delicious and simple recipe to a Sunday coffee can be done in a minute.

Simple, non-alcoholic, no-egg tiramisu with fresh raspberries
Ingredients
  • 700 ml water
  • 5 tbsp instant coffee
  • 400 g ladyfingers
  • 250 ml whipping cream
  • 500 g mascarpone
  • 3 tbsp icing sugar
  • 1 tsp vanilla extract
  • Zest of ½ lemon
  • 250 g fresh raspberries
Instructions
  1. Bring water to boil. When it starts to boil, pour it over instant coffee and let it cool. This step can be done one day ahead.
  2. Dip each ladyfinger from both sides in cooled coffee. If it is necessary, cut off ladyfingers in a desired size. Cover the whole bottom of a baking pan with ladyfingers.
  3. Whip whipping cream.
  4. Add mascarpone while mixing on low speed.
  5. Then, add icing sugar, vanilla extract, lemon zest and mix again.
  6. Apply 1/3 of filling over ladyfingers.
  7. Put raspberries on filling.
  8. Apply second layer of filling over raspberries.
  9. Dip ladyfingers in coffee again and create a second layer of ladyfingers. Put them on filling.
  10. Apply remaining filling over ladyfingers.
  11. Put tiramisu in a refrigerator for at least 6 hours, preferably overnight.
  12. Sprinkle it with cocoa before serving.
Recipe Notes
  • Be careful not to dip ladyfingers in coffee for too long so they won´t be too soaked with coffee, otherwise tiramisu will fall apart.
  • Baking pan – 20 x 30 cm
