Yes, I know, filling out applications really should not be a whole birthday cake celebration. However, an old Betty Crocker Cake Batter Cookie Bars recipe is worth making for this small victory. This cake batter cookie bars recipe is simple and perfect.

Birthday cake bars have several names: Funfetti Gooey Cake Bars, Cake Batter Blondies, and Funfetti Bars. They are all great recipes. However, this birthday cake bars recipe from Betty Crocker actually combines sugar cookies with cake mix.

Cookies and Cake

Using sugar cookie mix and cake mix together is what gives this cake batter bars its wonderful taste. Then add some homemade vanilla frosting with colorful sprinkles and it is a birthday cake celebration. These colorful blondies are for everyone.

Birthday Cake Bars

Birthday Cake Bars are also known as cake batter cookie bars. This easy dessert recipe is simple blondies that made with cake! Then decorated with frosting and sprinkles, these cake batter dessert is a celebration anytime!

Cook Time 45 minutes
Total Time 1 hour 5 minutes

Ingredients

  • 1 pouch (1 lb 1.5 oz)  sugar cookie mix
  • 1 box  white cake mix
  • 1 cup butter, melted and slightly cooled
  • 3 eggs
  • 1 teaspoon vanilla
  • 3 tablespoons rainbow sprinkles
  • 1 cup butter, softened
  • 3 cups powdered sugar
  • 3 tablespoons milk
  • 2 teaspoon vanilla
  • rainbow sprinkles

Instructions

Bars

  1. Heat oven to 350°F. Grease bottom of 13x9-inch pan with shortening or cooking spray.
  2. In a large bowl, beat sugar cookie mix, cake mix, melted butter, eggs and 1 teaspoon vanilla with electric mixer on low speed 30 seconds.
  3. Then beat on medium speed about 1 minute.
  4. Stir in 3 tablespoons rainbow sprinkles.
  5. Spread in pan.
  6. Bake 32 to 34 minutes or until golden brown.
  7. Cool completely, about 1 1/2 hours.

Frosting

  1. In a large bowl, beat 1 cup softened butter, the powdered sugar, 2 tablespoons milk and 1 teaspoon vanilla until combined.
  2. Add additional milk 1 teaspoon at a time, until spreading consistency.
  3. Spread over cooled bars.
  4. Sprinkle with assorted candy sprinkles.
  5. Cut into bars.
  6. Serve them up and ENJOY!

Notes

Interesting note: Sprinkles are called Jimmies in Pittsburgh! So it took a lot for me not to write rainbow jimmies. There is some Pittsburghese for you!
