What You Need For This Recipe

To make garlic shrimp asparagus tacos you need an extensive shopping list but when you taste the result it is so worth it. Here are the ingredients you need:

  • Green asparagus
  • Onion
  • Red bell pepper
  • Garlic
  • Shrimp
  • Mushrooms
  • Red chili flakes
  • Black pepper
  • Vegetable oil
  • Soft tacos

I used the scallion pancakes as they are a great substitute for soft tacos but you can make or buy any kind of tortilla or taco that you like.

How To Make Shrimp Asparagus Tacos

  1. To make this recipe start with a cast iron skillet for this recipe. You can make it in a normal baking pan but a cast iron skillet gives it a nice roasting flavor.
  2. Heat your skillet until medium warm and add 2 tablespoons of vegetable oil. Put the shrimp in the skillet.
  3. You can either use big cooked shrimp but you can also use raw frozen deveined shrimp or small shrimp. Any type of shrimp will do.
  4. The big shrimp or prawns will give it a nice sweet flavor.
  5. Pan-fry the shrimp for a couple of minutes and stir through it constantly. Add some red chili flakes and fresh black pepper.
  6. As soon as the shrimp are warm take them out of the pan and set them aside. Do not leave them in the pan too long as they will go rubbery.
  7. Then if needed add some more vegetable oil and start with the minced red bell pepper. Stir and add the onion and minced garlic.
  8. Stir some more and let the ingredients go soft before you add the sliced mushrooms. Now it is time to add the asparagus.
  9. These only need a couple of minutes so keep on stirring and add a couple of tablespoons of water.
  10. Then you can return the shrimp to the skillet and combine them so the shrimp are evenly distributed through the asparagus.
  11. Let it sauté until the shrimp are warm. Warm the soft tacos in the microwave or in the oven.
  12. If you want to warm the tacos preheat the oven to 350℉/175℃ and wrap your soft tortillas in aluminum foil and heat for 8-10 minutes.
  13. Put some garlic shrimp asparagus on the soft tacos and serve with some Tex-Mex rice.

Tasty Asparagus Recipe

It is almost a shame you can only buy them for a couple of weeks per year. So, when they are in season get them as often as you can.

This recipe can be eaten with or without tacos but I’m sure you will be surprised how could they taste with a taco. Use the green asparagus as they will be firm and crunchy and are a great combination with soft tacos.

But what if you do not like shrimp? Easy, you can change things up and use:

  • Salmon – either smoked or regular salmon can be used in this recipe. Slice the salmon into small strips and pan-fry it just like you did with the shrimp. Do not overbake.
  • Whitefish – use cod, tilapia, or panga filet to replace the shrimps. Also, slice into small chunks or strips and pan-fry for a couple of minutes. The recipe stays the same as with shrimp.
  • Chicken – if you do not like fish or shrimp substitute with strips of chicken. Pan-fry the chicken separately from the vegetables and set it aside. Combine with the asparagus at the end of the cooking time.

Ingredients

  • 200 gram shrimp
  • 200 gram green asparagus
  • 3 cloves of garlic minced
  • 1 onion minced
  • 10 mushrooms
  • ½ red bell pepper minced
  • ¼ teaspoon chili flakes
  • Black pepper
  • ¼ cup water
  • 4 soft tacos

Instructions

  1. Heat your skillet until medium warm. Add 2 tablespoons of vegetable oil. Put the shrimp in the skillet and pan fry for a couple of minutes and stir through constantly
  2. Add the red chili flakes and fresh black pepper. As soon as the shrimp are warm take them out of the pan and set aside. Do not leave them in the pan to long as they will go rubbery

  4. Add the asparagus and stir for a couple of minutes so keep and add a couple of tablespoons of water Then return the shrimp to the skillet and combine so the shrimp are evenly distributed through the asparagus. Let it sauté until the shrimp are warm
  5. Serve with warm tacos (see notes)

Notes

Warm the soft tacos in the microwave or in the oven. If you want to warm the tacos start this recipe by pre heating the oven at 350℉/175℃ and wrap your soft tortillas in aluminium foil and heat for 8-10 minutes.
