Marshmallows – Melting Mood and Daylight Saving

Hello my dear readers,

It is the Sunday, March 11th of 2018.

And are you missing that one hour?

You know the one that was stolen by Daylight saving.

Son of … the changing life.

In order to easier adjust to this day I am going to make light, very sweet pillows that will lighten your mood

and will help your delicate circadian clocks.

MARSHMALLOWS

For this recipe to be success you need to be organized and you need to do the following steps before you start making the recipe.

IMPORTANT

1.Find a candy thermometer

You will need a candy thermometer in order to make marshmallows.

If you don’t have one check the stores like Walmart, Winners, The Bay or

go to our safe place called AMAZON.

2.Prepare pan

Prepare 8×8 pan.

Use parchment paper to line.

Be sure that it comes up and over the side of 8×8 pan.

This is important because you will be able to easily “lift” marshmallows out of the pan.

Lightly grease the parchment paper with oil.

3. Sugar/cornstarch mixture

In a small bowl mix 3/4 cup icing sugar and 3/4 cup cornstarch. Set aside.

Now you are ready for baking show.

MARSHMALLOWS

Ingredients

1/4 +1/8 cup cold water

1 1/2 TBSP unflavored gelatine

3 egg whites

1 1/2 cup sugar

1/4 + 1 tsp water

1 TBSP vanilla extract

1 cup white chocolate

1 TBSP oil

Optional:

grounded Oreo, cinnamon, pumpkin spice, Lindt truffles

Instructions

Using a small bowl or 1 cup measuring cup add 1 1/2 TBSP gelatin powder.

Pour 1/4 +1/8 cup of cold water and stir. Set aside.

Using a large mixing bowl mix 3 eggs whites until foamy. (1 to 2 minutes)

Set aside.

In a small saucepanĀ  add 1 1/2 cup sugar and 1/4 cup + 1 tsp water.

Bring to boil and boil until temperature reaches 240 F (115 C) which is soft ball.

Start beating eggs white again on high speed and add boiled sugar/water mixture.

Pour it down the side of the bowl to avoid splashing.

Then add softened gelatin and mix for another 5 minutes or until reaches the room temperature.

If you touch a mixing bowl it should not be hot.

Stir in 1 TBSP vanilla.

Pour the mixture into prepared 8×8 pan.

Sift a layer of the icing sugar and cornstarch over the top of marshmallows.

Cool for about 3 to 4 hours. (needs to be set)

Find a larger size of baking pan or a cutting board.

With a sieve, generously dust the icing sugar/cornstarch on your cutting board.

Turn the marshmallows out onto the cutting board and dust with more icing sugar/cornstarch mixture.

Cut into squares or desired shapes.

Important:

Slip the knife into cold water before cutting the marshmallows.

Repeat as many times as you need it.

Eat and enjoy.

If you want fancier marshmallows, (and I know, you do) you can follow the options below.

White Chocolate Sauce/Glaze

You will need to melt 1 cup white chocolate using a double boiler method.

Once the white chocolate is melted add 1 TBSP oil. Mix well.

The white chocolate and oil mixture needs to be smooth and shine.

Option 1 – Oreo option

Using a food processor ground 15 Oreos.

Dip each marshmallow into white chocolate mixture then into oreo crumbs.

Place the coated marshmallows into baking pan or tray to set.

Option 2 – Truffle option

Top each marshmallow with a 1 tsp white chocolate, add Lindt truffle.

  1. Hi, I always wanted to make marshmallows at home.
    Always, but never did it.
    You mention a candy thermometer and I don’t have one.
    I was wondering which one to buy?
    I’ve seen picture above but I can’t see the brand name?
    Since, I am really beginner I never bought gelatin?
    Where do I find it and is there special brand name I should use?
    Sorry, if I am asking dumb question?

    Add to that hot chocolate and you have it.
    The perfect life in my imaginary country.
    Also,I love this recipe because there is no corn syrup.

    Every week I make something from your blog.
    And I really mean it. Every week.
    All your cookies, specially chocolate chip cookies are the best.
    Your 5 star chocolate cookies are my kid’s favorite.
    What else?
    Your Opera cake, pizza dough, all your lava cakes are to die for.
    Like I said I am your regular visitor and I loved your recipe for a long time.
    So, last week I’ve seen recipe for homemade marshmallows.
    I always wanted to make it but I never did.
    So,I said to myself, lets’ do it.
    The recipe was fantastic.
    I will never buy marshmallows from the store.
    Never again.
    Another plus of this recipe is,no corn syrup.
    I don’t like using it.
