Cucumber salad is a ubiquitous summer favorite, and this version is no exception. The cucumber and feta pair perfectly for a unique salad that makes a great side dish for chicken, beef and seafood.

It seems that salads are most popular when the warmer weather hits. I had to make this cucumber feta salad to commemorate the beautiful weather we’ve been having. If you need a fresh side dish or snack, this cucumber salad is a great choice!

How Do You Make Cucumber Feta Salad?

There’s not much to making this cucumber salad, it’s as easy as chopping everything up and mixing it in a bowl. This salad contains sliced cucumbers, red onion, feta cheese, avocado and fresh dill. The dressing is a combination of olive oil, spices, red wine vinegar, and mustard, and it only takes a quick second to make.

There are various types of cucumbers such as English cucumbers, little Persian cucumbers and the traditional waxed cucumbers. You can use whatever type of cucumber you like for this salad. Be sure to remove the seeds from your cucumber so the salad doesn’t get watery. To remove the seeds from your cucumber, simply slice it in half lengthwise and use a spoon to scrape out the seeds.

  • Lemon Juice
  • Tomatoes

You’ll want to make sure the red onions are thinly sliced before adding them to your cucumber salad. I use a mandoline slicer to get paper thin onion slices.

For the best tasting salad, use the feta cheese that comes in a brick. The brick style feta cheese either comes wrapped in plastic or in a tub of brine. The pre-prepared crumbled feta in tubs is often coated with anti-caking agents and doesn’t taste as fresh.

How Do You Make Cucumber Salad Creamy?

A popular way to eat this cucumber salad is creamy style. Many people simply add sour cream to their recipe in order to make it creamier. Ranch dressing is a great addition as well to make it creamy.

How Do you Make Cucumber Salad With Vinegar?

It’s actually common for vinegar to be used in cucumber salad. However, it takes a little longer because it has to be refrigerated for around two hours. The cold allows the ingredients to stay fresh while it steeps in the vinegar mixture. It’s a delicious way to make it!

I’ll be making this salad again and again. It’s a nice way to use up those extra cucumbers from the garden. It’s always a big hit at any get together. My kids love it when I make it as a side dish with dinner!

Ingredients 

For the salad:

  • 4 cups cucumbers seeds removed and sliced
  • 1/4 cup red onion very thinly sliced
  • 1 avocado peeled, pit removed, then diced
  • 1/4 cup fresh dill finely chopped
  • 1/2 cup feta cheese crumbled

For the dressing:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • salt and pepper to taste

Instructions 

  • Place the cucumbers, red onion, avocado, dill and feta cheese in a large bowl.
  • Place the olive oil, red wine vinegar, Dijon mustard, garlic powder, onion powder and salt and pepper in a small bowl. Whisk until combined.
  • Pour the dressing over the vegetables and toss gently to coat. Serve.

    This is so incredibly delicious! Made it last night with some home grown cukes. Didn’t have any avocados on hand but still turned out amazing. So crunchy and cool. Definitely will be making again!

  2. This is a family staple in our house. We make some variation of this recipe about twice a week. My toddler loves helping make the dressing and I’m happy to report that her interest in helping me prepare our yummy salads has even inspired her to nibble on some vegetables here and there….this is a HUGE WIN in our house. We always make the dressing exactly as described but we throw in all diff types of ingredients with our dressing and feta. Sometimes we add peppers, baby spinach, tomatoes….whatever we have on hand. It ALWAYS tastes yummy! Thank you 🙂
