The inspiration for this crunchy baked chicken with hot honey glaze is from my cousin’s final practicals for WASCE. She’s making baked chicken coated with bread crumbs with a honey glaze served with kenkey. She was home last week from some two hours “free” exeat (boarding school problems) and we talked through the practical.

The thought of chicken with hot honey glaze sent me to the kitchen the following day.  My cousin loved it so much, I had to share it here.

Oh my goodness! This chicken is so superb. Its juicy in the inside and crunchy and tasty with the power spice combination of garlic, ginger, onion and green chilli. 

That hot honey glaze is everything. I am literally thinking of spreading on toasts, drizzling over fried yam and basically licking it off the spoon.

I know I might have possibly branded a chicken recipe as my favourite. But well this crunchy baked chicken with hot honey glaze is love.

Ingredients
  • 1 1/2lb- 2lb chicken
  • 4 cloves garlic
  • 1inch ginger
  • green chilli as required
  • 1/2 onion
  • salt
  • 1 large egg
  • 2 cups cornflakes crushed
  • salt and black pepper to taste
  • 1 tablespoon margarine/ butter melted
hot honey glaze
  • 2 tablespoons honey
  • 3 tablespoons margarine/butter
  • 1/2 teaspoon smoked paprika
  • 1/4-1/2 teaspoon chilli powder
Instructions
  1. Clean the chicken and pat dry. Grind garlic, ginger, green chilli and onions together and add to the cleaned chicken. Add salt to taste. Marinate in the fridge for an hour or overnight. (overnight is best, do prep ahead)

  2. Remove chicken from the fridge about 30 minutes to baking. Preheat the oven to 220°C or 425° F. Line a baking sheet with parchment or baking paper.

  3. Set up your work station. Beat egg in a small bowl. Pour crushed corn flakes into another bowl preferably wide. Season with salt and black pepper.

  4. Remove each piece of chicken from the marinade, drop into the egg to coat and drench through the crushed corn flakes, pressing gently to stick. Place on the prepared baking sheet. Repeat until all the chicken has been used. Make sure not to crowd your pan, if necessary use two baking sheets. Lightly brush the chicken with the melted margarine or butter. Transfer to the oven and bake for 30 - 35 minutes or until the chicken is cooked through.

  5. Meanwhile. make hot honey. Melt 3 tablespoons of butter or margarine together. Once melted, whisk in two tablespoons of honey, paprika and chilli powder.

  6. Drizzle chicken with hot honey and serve.
