Lemon Strawberry Cooler

March must be the hottest month in Bangalore. In a few weeks, evening showers will visit us and cool the city down. Till then I’m doing the best thing one can do in dry hot weather – treating myself to chilled drinks. Lemon and strawberry cooler is one of my favorite go-tos of the season.

Lemon Strawberry Drink

I like the flavor of strawberry but not so much the raw fruit. In this drink I’ve removed the strawberry rawness and it turned out really good!

This recipe for lemon and strawberry cooler makes about four glasses (depending on how concentrated you like it).

You Need:

  • Strawberries – 15
  • Lemons – 2 large
  • Sugar – 3/4 cup (adjust to taste)
  • Water – 3 glasses

How To Make Lemon and Strawberry Cooler:

Cut strawberries into little pieces.

Bring half a glass of water to a boil. Mix in the sugar with the water and let it bubble for a minute. Then add strawberry pieces. Simmer for two more minutes. Switch off the heat and allow it to cool to room temperature.

Using a muddler (or a heavy ladle or a pav-bhaji smasher), crush the strawberry pieces coarsely into sugar syrup.

Squeeze the juice of two lemons (pass it through a strainer to remove the seeds and pips) into the strawberry-sugar concentrate. Top it with the remaining 2.5 glasses of water.

Mix everything and put it into the fridge to chill.

To Serve:

Stir the jug of lemon and strawberry cooler well, just before serving.

Fill half of each serving glass with ice cubes. Pour lemon and strawberry cooler over ice cubes. Enjoy its tangy sweet goodness. I love the sweetened strawberry bits in this drink!

Notes:

If you want less ice, substitute with some chilled water.

    This drink looks so refreshing. I love fruity lemonades. One of my favorites is with raspberry and I can imagine how good this one must be!

      Raspberries with lemon sounds great!

      I’ve rationed out portions for myself so that I don’t drink it all up in one go, and guess what I can’t wait for tomorrow to have my next glassful :)
