Directions

1. To make the chicken salad recipe: In a skillet, melt a small knob of butter over medium heat and toast corn until fragrant, about 3 to 5 minutes, stirring regularly.

2. Prepare the dressing by combining all ingredients (olive oil, greek yogurt, honey, apple cider vinegar, and mustard) in a small jar. Close the jar and shake vigorously to emulsify.

3. In a large salad bowl or shallow plate, add all the ingredients for the salad (romaine, spinach, corn, red onion, raisin, and feta). Drizzle the dressing on top and toss the chicken salad to coat well. Enjoy immediately!

Tips for the spinach corn chicken salad recipe

  • This spinach corn feta chicken salad recipe is the perfect solution to an easy dinner, but will also make wonders for your picnics or potlucks. You can prepare it up to a day in advance, keeping it in the refrigerator until you are ready to serve.
  • For a delicious smoky flavor, toast the corn in a skillet with a teaspoon butter before assembling the chicken salad.
  • Feel free to double or triple the batch of salad dressing, keep in the fridge and shake when you need to drizzle over your salads.
  • If you don’t find raisins, use dried cranberries instead.
  • Add cayenne pepper or diced green chiles or jalapeños if you’re looking for a kick!

What cooked chicken should I use?

Salads are all about quickness, so to save some time in the kitchen, you can use either chicken leftovers, or rotisserie chicken. We also like to buy a bag of frozen grilled organic chicken breasts that we heat up in a skillet. Sometimes a shortcut like that is necessary when we need to get dinner on the table in a hurry, but if you have a grill or barbecue and some time available, go ahead and grill your chicken breasts, after a good spice rub of course! Chicken in the salad will be more tender, smoky and juicy.
