How To Make Sweet Potato Flatbread

  1. To make this recipe you start with peeling 4 large sweet potatoes. Then cook the sweet potato in a pot boiling for approximately 15 minutes until soft.
  2. Drain the water and let the potatoes cool slightly before adding the first cup of Spelt flour. Stir it through the sweet potato.
  3. Then add ½ cup of Spelt flour and stir it through until the sweet potato absorbs it. Sprinkle Italian seasoning on the dough. Finally, add the last ½ cup of Spelt and knead the dough with your hands.
  4. You need to add two cups of Spelt flour because the sweet potato is wetter than regular potatoes. Knead the potato, Spelt flour into an elastic dough, and cut it into 8 equal pieces.
  5. Roll into a tortilla. Preheat a skillet to medium-hot.
  6. Bake in a dry cast-iron skillet for about 30 seconds per side. You do not need any oil or baking products. When the tortilla has brown patches on both sides the flatbread is done.
  7. Keep your sweet potato flatbread in a clean kitchen towel and you’re done. Your sweet potato tortilla is ready to serve.

Hello, can I substitute another type of flour since we don’t have spelt flour in my area?. Thanks so much for sharing this.

      Mauryn,

You are welcome. You can substitute the spelt flour for all purpose, whole wheat or wheat flour. Spelt gives it a little more flavor but the other flour options will work just as well.
