To make this Spanish tortilla recipe only takes 30 minutes and requires you to get the following ingredients:

  • Eggs
  • Potatoes
  • Onion
  • Garlic
  • Cherry tomatoes
  • Serrano ham
  • Olive oil

How To Make Spanish Tortilla With Serrano Ham

This is a very easy recipe. Start with boiling the potatoes, onion, and garlic for 20 minutes in olive oil on a low simmer.

Be careful to not fry your potatoes so keep it on a low simmer just enough to let the potatoes boil. In the meanwhile, whisk the 2 eggs.

Drain the potato mixture and preserve the olive oil you can use it to cook other dishes with it.

When the potato mixture is drained add the potato mixture to the whisked eggs and stir. Heat the skillet with some oil.

Add the cherry tomatoes and the Serrano ham to the mixture and pour into the skillet. Bake for 4 minutes on medium heat to let the egg set.

As cast-iron skillets get really hot you do not need to heat it really high. If there is one downside is that it is quite difficult to handle when you want to turn the tortilla.

To turn a tortilla the easiest way is using a small plate. You put the tortilla on it.

The next step is to cover the plate with the cast iron skillet. Turn the tortilla and bake the other side for 4 minutes.

I love authentic Spanish tortillas and when I came across this cute cast iron skillet, I knew what I was going to make.

Yes, authentic Spanish tortilla with Serrano ham. This mini cast iron skillet is really amazing. I found it online not knowing it would be this small.

The moment I saw it I knew I would be making a Spanish tortilla in it. The trick is to not cook the tortilla on high heat.

The eggs in the recipe will be burned fast so if you lower the temperature to medium your eggs get time to set and the outside will get a beautiful brown color.

As the skillet is round you get that real Spanish tortilla shape. This recipe yields between 8-12 portions and is ideal to serve at a party.

But I also like to make it as a lunch dish for two or eat it as tapas.

Do I Serve Spanish Tortilla Warm Or Cold?

Spanish tortilla is usually served cold with a slice of white baguette. When you go into a tapas restaurant the Spanish tortilla is always cold.

How To Reheat Spanish Tortilla?

You can serve the Spanish tortilla warm if you like. Just heat it in a preheated oven at 300℉ and warm for 10 minutes.

Wrap the Spanish tortilla in aluminum foil to prevent the tortilla from drying out.

Authentic Spanish tortilla recipe with Serrano ham

Serves: 8-12 Prep Time: 5 minutes Cooking Time: 28 minutes

Ingredients

  • 2 eggs
  • 200 grams of potatoes
  • ½ onion
  • 1 big clove of garlic
  • 5 cherry tomatoes
  • 3 slices of Serrano ham
  • 300 ml olive oil

Instructions

  1. Peel potatoes and dice in small cubes
  2. Heat pan and bring olive oil to the boil
  3. Boil the potatoes, onion and garlic for 20 minutes in olive oil on a low simmer then drain
  4. Whisk the 2 eggs and add the potato mixture. Add the cherry tomatoes and the Serrano ham
  5. Bake for 4 minutes on medium heat
  6. Turn the tortilla and bake the other side for 4 minutes
  7. Let it cool slightly
