Are you bored of mashed potatoes? Maybe you want to add more vegetables into your diet? Then this carrot and swede mash is for you! Swede is also known as rutabaga, if you were wondering what swede is!
This carrot and swede mash is easy to make, loaded with flavour and nutritious! You can serve this mash together with some good quality sausages (meat or vegetarian – up to you) a red onion gravy for a classic meal or together with roast chicken (or a nut roast)!

Carrot and swede mash is a great way to add more vegetables into your diet! Carrot and swede are both nutritious and you can almost always pick them up for a good price!
Here are a few health benefits of carrot and swede mash
- Supports eye health – Carrots are a great source of vitamin A. The form of vitamin A is beta-carotene, which is converted to active vitamin A in the body. Vitamin A helps to keep your eyes healthy and supports night vision.

Carrot and Swede Mash
Ingredients
- 350 g carrots
- 350 g swede
- 25 g butter (or olive oil
- salt and pepper to taste
Instructions
- Peel and dice your carrot and swede into evenly sized pieces.
- Add the diced vegetables into a pan of water so the water just covers the vegetables. Add a big pinch of salt and bring to a boil. Leave to cook for 10 minutes or until the vegetables are soft.
- Once soft, drain the water. Add the butter/oil and mash it with a masher. Add salt and pepper to taste.
- Enjoy with roast chicken, lentil loaf or meatballs!
Notes
- If you don't own a masher, you can mash it in a food processor. If you make it in a food processor, pulse it carefully so it gets mashed and not turn into a puré.
