This is a fast beignet that you can serve on many occasions like New Year’s Eve, Easter, Christmas, or any time with a cup of tea. They are made with vegan puff pastry and homemade apple pie filling. So, are you ready to learn how to make Apple beignets appelflappen? Let’s get started!

What You Need For This Recipe

If you want to make this easy recipe for beignets, make sure you have the following ingredients on your shopping list:

  • Puff pastry – you can make these beignets with vegan puff pastry
  • Filling – make some apple pie filling or take two apple
  • Sugar – to sprinkle on top of the beignets
  • Water – water to help the sugar stick to the beignets

How To Make Apple Beignets

  1. Beignets come in a lot of different versions you have fried, oven-baked, or apple in a batter. We are making beignets in the oven made with puff pastry appelflappen. For this recipe, you can use my trusted apple pie filling that I love so much. If you make it and store it in the fridge or freezer you can use it in this recipe.
  2. Preheat the oven to 460℉/225℃.
  3. Roll the puff pastry dough until you can cut two, 3-inch circles. Reuse the excess puff pastry. Make 18 puff pastry circles.
  4. Then put 9 puff pastry circles on a baking tray lined with baking paper. Add apple pie filling to the puff pastry circle before you press another circle on top.
  5. To make the circles stick even better put some water between the two pastry circles and press tight. Before you put them in the oven lightly brush the beignets with water and sprinkle them with organic sugar.
  6. You might think you need an egg to get brown beignets but this is not necessary. The sugar will caramelize and the water will turn the appelflappen a nice color brown.
  7. Put the baking tray in the oven for at least 15 to 20 minutes or until golden brown.
  8. Sprinkle them with some powdered sugar and the appelflappen are ready to serve.

Dutch Apple Beignet Recipe

Appelflappen is the perfect combination between a crunchy sweet outside and a soft inside. A classic apple fritter is fried in oil and contains a lot of fat.

It will add a lot of calories which is not required especially if you know there are other ways to bake a beignet. This recipe is completely vegan as it only uses plant-based ingredients. So, no egg wash or butter puff pastry.

So, I know you are wondering what the secrets of the best beignets recipe are. Here we go.

Secret 1 – The Pastry

The first secret to the best apple beignets is the vegan puff pastry. This assures you the beignet will stay together and allows you to fill the appelflap.

If you use a batter you will have to fry it in oil. Batter in oil absorbs a lot of oil which you do not want.

Nowadays you can easily buy vegan puff pastry so no need to pass on a beignet when you are vegan.

Secret 2 – The Filling

The second secret is all about the filling. A New Orleans beignet doesn’t contain any filling but a Dutch beignet is made with apple filling.

To make these appelflappen you have to fill them with apples but we fill them with this homemade apple pie filling. You slice apples, sprinkle with the lemon juice, and set aside. Add water and arrowroot in a saucepan and whisk then add sugar, and cinnamon.

Whisk until well combined. Now add the sliced apples to the saucepan and simmer on low heat until the apples are soft and tender. Allow to cool before using in the recipe or store in an air-tight jar.

The combination of crisp puff pastry and soft apple pie filling is priceless and a real classic. When you taste these beignets, you will wonder why you would ever eat a regular beignet again.

If you want you can add other fruit to your easy beignets like:

  • Banana
  • Peach
  • Cherries
  • Nectarines
  • Plums

Secret 3 – Baking Method

The third secret has everything to do with the baking method. Instead of frying your beignets put them in the oven. You do not need any additional butter, milk, or eggs to get a nice brown color on your beignets.

Just make sure you glue the puff pastry properly with water. You will be surprised at how nice and brown they are.

How To Store Dutch Apple Beignets

These apple beignets can be stored in several ways. Store them:

  • Kitchen counter – Leave them outside of the fridge for up to two days
  • Fridge – Put them in the refrigerator for up to 4 days
  • Freezer – Want to keep them for more than a week freeze the apple fritters in a ziplock bag for a couple of weeks

Want to eat them defrost them when this applies and warm them for a couple of minutes in the oven and you are good to go. So yummy.

Ingredients

  • 6 puff pastry squares
  • Apple pie filling or 2 apples
  • Sugar
  • Water

Instructions

  1. Make apple pie filling
  2. Preheat the oven at 460℉/225℃. Roll the dough until you can cut two, 3 inch circles. Reuse the excess puff pastry. Make 18 puff pastry circles
  3. Put parchment paper on a baking tray and put one circle on the paper
  4. Add some apple pie filling and press the second circle on top of the first circle with apple. Add some water to make the circles stick together better
  5. Repeat 8 more times
  6. Brush the beignets lightly with water and sprinkle with sugar
  7. Bake in the oven for 15-20 minutes
  8. Ready to serve

Notes

If you do not want to make apple pie filling, cut an apple, remove the clock house and slice in thin slices.
