I’m showing you how to make peppernuts and turn them into these cute macarons. These peppernuts are nice and crunchy. When you’ve had one, you will not be able to resist and want more until they are gone. Promise! So, are you ready to learn how to make pepernoten? Let’s get started!

What You Need For This Recipe

To make this recipe you need a limited number of ingredients. Put the following items on our grocery shopping list:

  • Flour – you need self-raising flour
  • Butter – you can use regular butter or plant-based butter
  • Sugar syrup – to sweeten the Petternuts
  • Spices – we use so-called speculaas spices that you can make as well

In the Netherlands, you can buy speculaas spices in the store but you can easily make speculaas spices by combining:

  • 2 teaspoons cardamom
  • 2 teaspoons cinnamon
  • 1 teaspoon grounded cloves
  • a pinch of salt
  • 1 teaspoon nutmeg
  • 1 teaspoon ginger powder

How To Make This Peppernut Recipe

  1. If you want to make this recipe you start with self-raising flour. Buy it fresh or make it yourself to ensure the leaving agent will do its job.
  2. Put the self-raising flour in a large bowl and add the spices. Stir to properly combine the ingredients before you add the sugar syrup.
  3. The final step is to add the cold butter. Then knead into a cookie dough ball with cold hands and let it rest in the fridge for at least 1 hour.
  4. Cut the cookie dough into four equal pieces. Roll the equal part into a cigar shape of about 1 inch thick. Then cut it into 1-inch pieces.
  5. Roll each 1-inch piece into a ball. You will get about 48 to 50 large peppernuts. Line a baking tray and leave some room between each peppernut.
  6. Bake in a preheated oven at 350℉/175℃ and bake for about 20 minutes. Let them cool so they can get crunchy. Then put some homemade Nutella between two peppernuts and create a peppernut macaron.
  7. These kruidnoten are the best and you can also eat them solo if you are out of Nutella.

Dutch Treat Recipe

Just like Santa Claus at Christmas, we have the Sinterklaas celebration in the Netherlands which is a children’s fest. The Sinterklaas celebrations are as much about sweet treats as it is about gifts.

You can get a lot of treats like:

  • Chocolate capital letters – which are big chocolate shaped in a capital letter. You usually get the first letter of your name
  • Speculaas – a spiced cookie that has a similar taste to pepernoten
  • Marzipan
  • Banquet letter – which is almond paste covered with puff pastry
  • Peppernuts – or pepernoten as they are called in Dutch and are similar to gingerbread cookies

Peppernut cookies are shared by Sinterklaas when visiting the children. The peppernuts are small crunchy cookie treats.

You can eat these cookies plain but turn good into great turn them into delicious macrons with a filling of (homemade) Nutella. As we use all vegetable ingredients you can eat this if you are vegan or vegetarian.

How To Store Peppernuts

The best way to store pepernoten is in an airtight container or a cookie jar. That way you can keep them fresh for about 4 days but I am certain these will not last that long.

If you want to enjoy them longer you can also store the peppernuts in the freezer. Thaw them when you want to eat you do not have to warm or bake them again.

Peppernut Homemade Nutella Macarons

Serves: 25 Prep Time: 10 minutes Cooking Time: 20 minutes

Ingredients

  • 250 grams self raising flour
  • 100 gram vegetable butter
  • 200 gram of sugar/pancake syrup
  • Speculaas spice:
  • 2 teaspoons cardamom
  • 2 teaspoons cinnamon
  • 1 teaspoon grounded cloves
  • a pinch of salt
  • 1 teaspoon nutmeg
  • 1 teaspoon ginger powder

Instructions

  1. Put 250 grams of self-raising flower in a bowl
  2. Add the spices
  3. Add 200 grams of sugar syrup
  4. Now add 100 grams of cold butter. Knead into a cookie dough ball with cold hands and let it rest in the fridge for at least 1 hour
  5. Cut the cookie dough into four equal pieces
  6. Roll into a cigar shape of about 1 inch thick
  7. Then cut into 1 inch pieces
  8. Roll each piece into a ball
  9. Put on a baking tray and leave some room between each peppernut
  10. Bake in a pre heated oven at 350℉ and bake for about 20 minutes
  11. Let them cool so they can get crunchy before you put some homemade Nutella between two peppernuts and create a peppernut macaron

Notes

You will get about 48 to 50 large peppernuts.
