A great snack you can serve with peanut satay sauce or powdered sugar. On the table in less than 20 minutes. This Surinamese snack recipe is made with just four ingredients including ripe plantains. Fry them in oil and you will have such a great appetizer or midday snack. So, are you ready to learn how to make pan fried plantain? Let’s get started!
Fried Plantain Ingredients
You only need a handful of ingredients to make bakabana. Most likely you have most already in your kitchen cabinet:
- Ripe plantain
- All-purpose flour
- Baking soda
- Salt

How To Make Pan Fried Plantain
To make fried plantain you need ripe plantain because that is the main ingredient.
I am sure you can use a regular banana for this recipe as I have eaten it in Chinese restaurants but I like it better with plantain.
Plantain looks like a banana but takes much longer to get ripe. There are many discussions on when you can eat plantain and I like to eat it when it is totally ripe.
You have to cook it though because you can’t eat plantain like a regular banana.
While I like a regular banana not to be overripe with plantain for me it is a must. The riper a plantain (the skin is almost black) the sweeter it gets.
Take a bowl and add the flour, baking soda, and salt. Stir to combine before you add the water and turn it into a batter.
Slice the plantain about an inch thick.
Dip a slice completely into the batter. You could bake them in a fryer or you heat a skillet with a layer of oil (my favorite method)
Heat it up and bake the bakabana until golden brown. Turn and pan-fry the other side.

Sweet Fried Plantain Recipe
One of the best things about having a mixed background is that I like so many foods. My father is from Surinam and one of the many things he would make is bakabana.
Just the other day I realized it has been a while so time to share with you this favorite. Besides plantain, it contains only four ingredients.
Surinam foods are actually a melting pot of many different cultures. The Creole, Javaan, Chinese and Indian foods all come together there.
It is probably the reason why I like these types of foods so much as I have Creole and Chinese blood in my family (and lots more but I will not bore you with my family history).
Ever since I remember my father would make us roti and roti chicken and bakabana. To eat as a snack or to eat as a side dish.
How To Store Pan Fried Plantain?
When you made fried plantain, you have several ways to store them. Before you do let them cool completely:
- Room temperature – if you plan on serving these sliced fried plantains on the same day you can store them at room temperature. After cooling you can store them in a food container and serve cold or reheat
- Refrigerator – if you plan on serving them within a day or 3 you can store them in the fridge. Put them in an airtight food container or resealable bag
- Freezer – want to store them longer you can store them in the freezer. Put them in a freezer-friendly food container and you can store them for at least 2 months
How To Reheat Fried Plantain?
To reheat bakabana you have several options:
- Cast iron skillet – preheat your cast-iron skillet to medium and add a little bit of oil to coat the bottom of the pan. As you pan-fried the plantains and only want to warm them, they do not need to brown. Put the bakabana in the pan and let it heat. Turn them regularly until warm
- Air Fryer – you can also reheat them in an Air Fryer. Preheat the Air Fryer to 350℉ for 3 minutes. Wrap the fried plantains in aluminum foil or put them in a cake pan to keep your Air Fryer clean. Warm for 4-5 minutes or until warm. If you heat them in a cake pan turn the plantains halfway through the reheating time
- Microwave – put the plantains on a microwave-safe dish. Heat them for 30 seconds and check if they are already warm else extend for 30 more seconds
Serving Suggestions For Bakabana
You can eat your bakabana with:
- Satay sauce – a peanut sauce. You can make it yourself and take the peanut butter recipe as the base. Take 4 tablespoons of peanut, add 2 tablespoons of milk, about 1/2 tablespoon of sweet soy sauce, and a splash of Sriracha sauce. Stir and let it simmer for a couple of minutes. If too thick add a splash of water.
- Powdered sugar – sprinkle with powdered or icing sugar

Delicious pan fried baka bana
pan fried plantain also known as bakabana is a very easy recipe to make. This sweet Surinamese snack only requires 4 ingredients.
Ingredients
- 1 ripe plantain
- ½ cup of all purpose flour
- ½ tsp of baking soda
- Snif of salt
- ½ cup of warm water
Instructions
- Put the all purpose flour in a bowl and add the baking soda and salt
- Stir through and add the water. Whisk into a batter similar to pancake batter
- Cut the plantain in small slices
- Dip each slice of plantain in the batter
- Heat a baking pan and cover the bottom with oil
- Pan fry about three pieces of baka bana at a time
- Drain on kitchen paper.
- Serve immediately
