Kale and Orange Salad

Course Salad
Total Time 15 minutes
Servings 5 -6 portions

Ingredients

  • One bunch of fresh kale 4-5 stalks
  • 1/3 cup of dried cranberries
  • 1 tbsp of Sesame seeds
  • Salt to taste
  • 2 tbsp of grated Parmesan cheese
  • 1 tbsp of sesame seed oil toasted or the regular one
  • 1 orange cut in half
  • 10 cherry tomatoes cut in halves
  • 1 tsp of lemon juice

Instructions

  1. Dressing preparation: Squeeze both halves of the orange into a cup, you should get about 5 tbsp of freshly squeezed juice. Add Sesame seed oil, lemon juice, and salt. Mix together.

    Separate kale leaves from the stalks and chop the leaves. Put them into a medium-size bowl and massage them (squeeze them with your hands) until they are soft.

    Chop the leftovers of the orange fiber, that got left after squeezing, into small pieces and add them to the bowl. Mix them with the kale.

    Add cranberries, sesame seeds, parmesan cheese, cherry tomatoes to the salad and mix them all together.

    Pour the dressing over the salad, mix it and put the salad into the refrigerator.

Recipe Notes

You can serve it right away or keep it refrigerated for about an hour to let this salad get well marinated.
