Toast with Avocado, Bell Pepper and Egg

Servings 1 toast

Ingredients

  • 1 piece of toasted bread
  • 1 egg
  • 1/2 avocado
  • Cilantro finely chopped
  • 1 slice of bell pepper ring
  • Salt to taste

Instructions

  1. Place a small size skillet on the stove over low heat. Add extra virgin olive oil, and put a circle sliced pepper into the skillet.

    Crack the egg into a bell pepper ring, season it with salt and cook the egg until it is ready.

    When the egg is ready, carefully take it out of the skillet by using a spatula.

    Mash or slice an avocado on top of a piece of toasted bread.

    Sprinkle cilantro on avocado and put a fried egg on top of the toast.

Recipe Notes

You can serve it with either a slice of turkey, or salmon, or vegetables.
