This is one of those set-and-forget recipes. I made it within my Dutch oven but if you own a slow cooker, Instant Pot or Crock-Pot you can make this recipe as well. Are you ready to see how you can make this Mexican pork carnitas recipe? Let’s get started!
What You Need For This Recipe
To make this pork carnitas recipe you need quite a list of ingredients. Make sure you get the following ingredients from the store:
- Pork – use pork tenderloin
- Tortillas – soft vegan flatbread or regular tacos
- Cumin
- Oregano
- Lemon juice – fresh juice
- Orange juice – fresh juice
- Onion – finely diced
- Garlic – fresh garlic
- Broth – you can use meat broth or vegetable broth
- Soy sauce
- Bell pepper – diced sweet red bell pepper
Note that the full ingredients list, including measurements, can be found in the recipe card below.
How To Make Pork Carnitas
- Start with a good piece of tenderloin of about 300 grams and cut it into three equal parts. To give the tenderloin some spice, add cumin and oregano and rub them on the tenderloin.
- Put the pork in a slow cooker or Dutch oven and add, chopped onion, garlic, lemon juice, orange juice, crumbled beef stock cube, soy sauce, and water.
Prepare Slow Cooker Pork Carnitas
Cooking this recipe in a slow cooker, Crockpot Express, or Instant Pot you have two options. You can set it to:
- HIGH and put the slow cooker on for 3 HOURS
- LOW and put the slow cooker on for 6 HOURS
Prepare Pork Carnitas In The Oven
- Preheat your oven to 450℉/220℃ and cook the carnitas for 60 minutes. Make sure you close the lid of your Dutch oven so the water in the recipe will not evaporate but stay in the pan.
- This will help to get tender pork instead of dried-out meat. While the pork tenderloin is cooking boil some potatoes with skin and bake in a frying pan.
- If you like green beans, you can cook them as well.
- Take tenderloin out of the slow cooker or oven. Shred the pork using two forks. Then heat a skillet on the stove.
- A normal frying pan will work but I recommend a skillet. Sear the shredded carnitas in the skillet so they can get nice and crispy.
- Add the shredded tenderloin to the skillet and add some gravy. Sear the pork on high heat.
- Now it is time to plate it up!
- Put the potatoes on the plate, and add the green beans. Take a soft vegan flatbread (wrap in aluminum foil and warm for 5 minutes) or a crispy corn taco.
- Take a nice helping of pork and decorate with some thin sliced red bell peppers. Your slow-cooker pork tacos are ready to serve.
Soft Carnitas Recipe
This is such an easy recipe you will not believe it. If you have a slow cooker, you can put it together in the morning and have tender pork loin in the evening.
But if you do not own a slow cooker, you can easily simulate a slow cooker using your oven. It will take less time but the result is about the same.
Soft, tender, shredded, pork loin carnitas tacos. Who doesn’t want a recipe that doesn’t require your attention while you go about:
- Cleaning the house
- Read a book
- Sip a glass of wine

Still, you will be able to put a splendid dish on the table. This is also a great recipe for a dinner party. Because while dinner is cooking you have time to make the house presentable and wow your guests with this fancy dinner.
They will love your pork carnitas slow cooker recipe I promise. You can take two forks and pull them apart.

How To Store Pork Carnitas
If you have leftover pork carnitas you have several ways to store them:
- Refrigerator – store the pork and flatbread separately. Put the pork in an airtight food container and keep it in the fridge for up to 3 days.
- Freezer – if you want to store the pork longer you can keep it in the freezer. Store the pork in a freezer-friendly food container and you can keep it for up to 3 months.
