Linguine Pasta With Aubergine And Tomatoes

This Aubergine and Tomato Linguine Pasta, an Italian Food, with fresh torn basil leaf is an amazing Italian dish that is flavorsome and it emits fresh flavors. Recipe of Linguine Pasta With Aubergine And Tomatoes

Ingredients:

1 tbsp. olive oil
400gms chopped tomatoes
1 small onion, finely chopped
2 garlic cloves, finely chopped
handful basil leaves picked, stalks finely chopped
2 aubergines, cut into slices
500gms boiled Linguine pasta

Method:

1. Heat 3 tablespoons of oil in a pan and sweat the onion, garlic, and basil stalks for appx 5minutes.

2. Add the tomatoes, season well, and bring to a steady simmer. Cook for about 10-15 minutes.

3. Meanwhile, fry the aubergine in the remaining oil until golden then stir into the tomato sauce with the basil leaves.

4. Cook the pasta according to the packet instructions, drain, then stir through the sauce.

5. Serve the linguine pasta hot with torn fresh basil leaves and fresh sliced tomatoes.
