Veg Patiala|Paneer Stuffed Papad Rolls

Ingredients

  • For Papad Rolls
  • 50 Grams Grated Paneer/Cottage Cheese (You can also use Tofu)
  • 1 tbsp Olive Oil
  • 1 cup Grated Vegetables(Capsicum, Onion, Carrots or any other vegetables of your choice)
  • 1/3 cup Chopped French Beans
  • 2 tbsp Chopped Coriander Leaves
  • 1 teaspoon Cumin Seeds
  • ½ teaspoon Turmeric Powder
  • 1 teaspoon Red Chilli Powder
  • 2 tablespoon Chopped Mix Dry Fruits (Cashew, Almonds, Pistachios)
  • 1 teaspoon Garam Masala
  • Salt as per taste
  • 3 Papad (Moong or Urad)
  • Water for Soaking Papad
  • 1 tbsp cornflour + 3tbsp water mixture (for sealing papads)
  • Oil to Shallow Fry
  • For Gravy
  • 2 tablespoon Clarified Butter/Ghee
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Fennel Seeds
  • 1 tablespoon Ginger-Garlic Paste
  • ½ cup Onion Paste
  • 1 teaspoon Garam Masala
  • ½ teaspoon Turmeric Powder
  • 1 tsp Cumin Seed Powder
  • 1 tsp Coriander Powder
  • 1 tsp Red Chilli Powder
  • 1 cup Fresh Tomatoes Puree
  • Salt as per taste
  • 2 tbsp Fresh Full Fat Cream
  • 1 tablespoon Butter
  • Water as required
  • For Garnishing
  • 50 Grams Grated Paneer
  • Fresh Coriander Leaves

Directions

  1. Heat oil in a pan, add cumin seeds and chopped dry fruits. Also add the grated vegetables. Give it a toss.
  2. Add french beans to the mixture and mix them well.
  3. Add red chilli powder, turmeric powder, garam masala powder and salt. Mix it well.
  4. On a low flame, cover the lid and cook it for 3 to 4 minutes.
  5. Add coriander leaves and give it a mix.
  6. Cut papad into half and apply water to make it moist.
  7. Place the stuffing in the center and seal the papad with the help of cornflour and water mixture.
  8. You can also make the traditional cylinder style papad rolls. For that, place the stuffing on the left side of the papad & keep folding it from all the sides. Seal it with cornflour and water mixture at every fold.
  9. Now, heat oil in a pan on medium flame and place the papad rolls. Fry papad on all sides till golden brown. Stuffed papad rolls are ready. Place them on an absorbent paper and keep aside.
  10. For gravy, heat ghee in a pan. Add cumin and fennel seeds.
  11. Once the cumin and fennel seeds starts crackling, add ginger garlic paste, onion paste and cook well.
  12. Once cooked, add tomato puree and mix evenly.Allow them to cook.
  13. Now, add red chilli powder, turmeric powder, garam masala, cumin and coriander seed powder and mix well.
  14. Cover it and cook it for 10 to 15 minutes.
  15. Once cooked, add water and salt and allow it to cook for 4 to 5 minutes.
  16. Place the papad rolls in the gravy and coat them well.
  17. Add butter and fresh cream to the gravy and mix properly.
  18. Let it cook for 1-2 minutes.
  19. Garnish it with fresh coriander leaves and paneer and serve hot!
