I can't believe it's the end of August already! What the heck happened to summer? I keep seeing pumpkin spice recipes and Halloween ads everywhere, and kids are getting ready to go back to school. So many families have already finished their shopping for school supplies and are preparing to transition from sunny days at the beach to busy school days.

I am hoping this Fruit Salad with Key Lime Dressing recipe will make the transition easier for busy families! Kids are sure to LOVE this salad: it is made from some of my favorite fruits - pineapple, cantaloupe, and strawberries - and has a deeeelicious dressing made from So Delicious Dairy Free® Key Lime yogurt alternative. I added some freshly chopped mint for the extra fresh flavor, because we all know that mint + lime is a great flavor combination, right? 😉 I topped the salad with crumbled graham crackers to give it some crunch on top of all the fruit.

The salad is great as part of breakfast or part of a packed lunch, and it is also a great after-school snack. If you're going to pack this fruit salad for a school lunch, I would recommend packing the graham crackers separately in a snack baggie and having your kids crush it up right before eating - this way it is extra crunchy and they get to have a little fun with their lunch.

Creamy Fruit Salad with Key Lime Dressing

Ingredients

  • 2 cups diced pineapple
  • 2 cups diced cantaloupe
  • 2 cups quartered strawberries - (about 10-14 medium strawberries)
  • ¼ cup mint leaves - , finely diced
  • 1 (5.3-oz) container So Delicious Dairy Free® Key Lime yogurt alternative
  • 6-8 graham cracker squares

Instructions

  • In a large bowl, combine all the ingredients from the pinapple to the So Delicious Dairy Free® Key Lime yogurt alternative and mix well. To serve, scoop the fruit salad in a bowl and crush a graham cracker over the top.
