One thing that I have noticed about my body while eating Paleo is that I don’t want dessert as often. I must clarify though, that I still probably want dessert more than the average person. Which is why I have been spending so much time trying to come up with easy Paleo dessert recipes.
And which is also why I am so happy to be able to share this recipe with everyone! Quick Berry-Mango Sorbet is sweet, tart, fruity and has the texture of sorbet. Its heaven in a bowl! Its also better for you than many of the well-known brands selling sorbet at the grocery store.

I know that looks like a strong assumption, but lets look at the facts. Häagen-Dazs strawberry sorbet has corn syrup and sugar in it. This recipe doesn’t.
One cup of Häagen-Dazs sorbet is 300 calories. One cup of this Quick Berry-Mango Sorbet is around 197 calories.
I’m not trying to slam Häagen-Dazs. They make fantastic ice-cream and many of their products don’t have added corn syrup. I just don’t understand the need for corn syrup in many of their sorbets.
Especially when that same sorbet is sold in Europe without corn syrup.
That said, I’ll stick with my Quick Berry-Mango Sorbet. Its corn syrup-free and can be made in the blender in 5 minutes!
This recipe makes 2 cups of sorbet… which is the perfect amount for two. 🙂
To make it, you blend all of the ingredients and keep scraping the sides of the blender with a small spatula every 10 seconds or so until the mixture thickens into a sorbet texture.
I started off using the “crush” button of my ninja. All of the pieces separated into icey chunks. Then I used my medium “blend” button and alternated between that and the lighter “dough” setting.
You’ll know that its ready once it looks like sorbet, sticks to the bottom of the blender, and stops moving when the blender is on.
The possibilities for flavor creations are endless 🙂

Quick Berry-Mango Sorbet (Paleo, GF)
Ingredients
- 1/2 cup coconut milk, or almond milk
- 1 tsp honey
- 1 cup frozen mixed berries
- 1/2 cup frozen mangos
Instructions
- Put all the ingredients in a blender.
- Blend all of the ingredients at the highest or normal setting—-I used the “crush” button on my ninja first. All of the pieces should separate and almost form icy chunks.
- Scrape the sides and then hit the medium “blend” button. Scrape the sides again and hit the “dough” or lighter blending mode. Alternate between blend and dough while scraping the sides every once in a while until the mixture turns into a soft firm substance and there is no use for the blender anymore.

This was AMAZING. I don’t believe that this is two servings, because I devoured it whole and found myself scraping the bowl! I used 1 tsp maple syrup instead of the honey, but that was the only substitution. I found this on the PhoenixHelix roundtable. So fantastic and such a treat while following AIP – thank you!
