I love Mexican food. It’s my favorite type of restaurant to go to, and it’s my favorite food to cook at home too. When we go out to eat, I love authentic Mexican food that I can’t replicate at home. At home, I can get the flavors pretty good, but it still has more like an American-Mexican feel to it. I’m okay with that, especially when I make something like these Fiesta Chicken Quesadillas.

I made them for dinner recently and raved about them all through dinner. Which I guess is pretty egotistical but sometimes, when you nail it, you nail it.

Fiesta Chicken Quesadillas

What You’ll Need:

  • 3 chicken breast tenderloins
  • 1 orange pepper
  • 1/2 medium onion
  • 4 flour tortillas
  • 2 tablespoons olive oil
  • 4 cloves garlic
  • 1 tablespoon adobo seasoning
  • Pinch of salt
  • Pinch of pepper
  • 1/2 bag of habanero and jalapeno shredded cheese

What You’ll Do:

Heat the olive oil over medium-high heat.

Slice the pepper and onion into strips. Saute them in the olive oil until they are tender, about 15 minutes.

Add the garlic, then sautee about two minutes.

Slice the chicken into thin strips and add to the pan. Add the adobo, salt, and pepper. Saute until the chicken is cooked through, about five minutes.

Remove everything from the pan, remove the pan from the heat, and wipe it down.

Put it back on the heat and put in one flour tortilla. Top with cheese and heat it until the cheese is slightly melted.

Top with half the chicken mixture. Add a bit of cheese on top of it and top with another tortilla.

Flip it and cook it on the other side until the cheese is melted. You’ll cook about two to three minutes on a side, then flip it.

Cut into six even pieces and serve with rice and beans (you could also serve with sour cream, salsa, or guacamole too).
