For these pink lemonade cheesecake parfaits, opt for a standard powdered lemonade mix to ensure the best flavor and consistency. I have not personally tested sugar-free lemonade mixes, so I cannot recommend them for this recipe.

Tips for Perfectly Whipped Cream

For this recipe, the whipped cream should be fairly thick, so getting the consistency right is key. The recipe states that the cream should form stiff peaks, and that’s exactly what it sounds like: when you remove the mixer blades, the cream should pull upward and then keep its shape, looking like mountain peaks.

To help ensure this happens, try these tips:

  • Use high-quality whipping cream that’s extremely fresh (just purchased, just opened).
  • Chill the heavy whipping cream in the freezer for 15 minutes before use. Use the cream as soon as it’s removed from the fridge.

  • The whipped cream mixed within the cheesecake layer might lose some of its volume over time.
  • The graham cracker layer could absorb moisture from the cream, becoming less crisp and more soggy.

To enjoy them at their best, plan on making these parfaits no more than 4-8 hours before serving.

How Long Are They Good for?

When stored in the refrigerator, these parfaits will maintain their best taste and quality for the first 24 hours. They can stay fresh for up to five days, but note that the textures of the cheesecake and graham cracker layers may change over time, such as the cheesecake deflating or the graham cracker layer becoming soggy.

Can You Freeze Them?

Bad news here, guys. Freezing is not recommended as it can alter the texture, especially of the graham cracker layer, which may become soggy upon thawing.

Notes & Tips For Pink Lemonade Cheesecake Parfaits

  • For this recipe, I highly recommend using a stand mixer or a hand mixer. This isn’t a recipe you can make by hand with a whisk.
  • You can use other flavors of dry lemonade mix.
  • If graham cracker crumbs aren’t available, you can make your own by processing whole graham crackers in a food processor or crushing them in a Ziploc bag with a rolling pin or meat tenderizer. Place a wooden cutting board under the bag to protect your countertops during this process.

Pink Lemonade Cheesecake Parfaits

Ingredients 

  • 2 cups graham cracker crumbs
  • 1 tablespoon granulated sugar
  • 3 tablespoons unsalted butter, melted
  • 1 cup heavy whipping cream, very cold
  • 8 ounces cream cheese, softened
  • 3/4 cup powdered sugar
  • 2 tablespoons dry pink lemonade mix
  • food coloring, optional

Instructions

  • In a small bowl, add graham cracker crumbs, sugar, and melted butter. Stir with a fork until graham cracker crumbs are saturated. Set bowl aside.
    2 cups graham cracker crumbs, 1 tablespoon granulated sugar, 3 tablespoons unsalted butter
  • Using a stand mixer (or a hand mixer + large bowl), beat cold whipping cream on high speed until it doubles in size and forms stiff peaks. Set bowl aside.

  • In a clean large bowl, add cream cheese, powdered sugar, and pink lemonade mix. Use a stand mixer or hand mixer stand mixerand beat on high speed until smooth, about 3-5 minutes.

  • Add cream cheese mixture to bowl with whipped cream. If desired, add a few drops of red or pink food coloring. Use a spatula to fold everything together until incorporated.

  • Arrange parfait fillings in serving glasses as you see fit, whether it be to have one layer of graham cracker mixture topped with pink cheesecake (as pictured) or multiple layers of both. When adding graham cracker layers, do not worry about packing it down; loose and fluffy layers will be easier to spoon and eat.
  • Chill cheesecake parfaits for 1 hour.
  • Serve as desired.

    • Hey Lisa, sorry for the late reply! You can make & refrigerate these in advance, but because they have cream cheese in them, they’ll need to be left out for a few hours so the cream cheese softens up again before serving. So if that fits into your schedule, then yes, they can definitely be made in advance 😀
